The 2023 Silex is a blend of 39% Chardonnay, 28% Pinot Blanc, 17% Pinot Gris and 16% Pinot Noir, matured for 12 months in a mix of new and neutral oak barrels. It is full of bright lemon and apricot fruit, enhanced by more complex aromas of flint, butter, pastry and almond. It has delicate tannins and a textured mouthfeel that reflect its skin-contact fermentation.
 
Suggested pairing: Shellfish, grilled asparagus or a nutty cheese.
